I see!

Nikujaga is often referred to as a stew in English.

In Japan, however, stew usually brings to mind a white, creamy dish.

Well, my husband has been staying home with COVID since the day before yesterday, and this morning, my child started coughing, so our house is in a bit of chaos.

Amidst all that, I made nikujaga.

If you're concerned about hygiene, you might want to turn back now...

Our family's menu often features the same dishes on the same day of the week, two weeks in a row.   We frequently repurpose leftovers.

The white stew I made on Tuesday will be transformed into a gratin the following

Tuesday.

・ (Shirataki noodles)

Shirataki noodles are thin, translucent, gelatinous noodles made from the konjac yam. They are low in calories and carbohydrates, and have a chewy texture.

Rice noodles: Similar texture, but higher in carbohydrates.

Glass noodles (cellophane noodles): Similar texture, made from mung bean starch.

Vegetable noodles (zucchini, carrot): For a low-carb option.

Daikon is a large, white radish with a mild, slightly peppery flavor. It is commonly used in Japanese cuisine.

White radish (regular radish): Similar flavor, but smaller and may be spicier

Turnip: Similar texture and mild flavor.

Parsnip: Slightly sweeter flavor.

 (Mirin)

Mirin is a sweet Japanese rice wine used for cooking. It adds sweetness and a glossy finish to dishes.

Sake + sugar: Mix 1 tablespoon of sake with 1/2 to 1 teaspoon of sugar.

Dry sherry + sugar: Similar to sake, but with a different flavor profile.

Sweet marsala wine: Naturally sweet, may not need added sugar.

White grape juice + lemon juice: Non-alcoholic option.

The pot I used has a 20cm diameter.

The pot I used has a 20cm diameter.

It's about 10cm deep.Next,

sauté the carrots and daikon radish,

followed by the onions. ;Add water. Daikon radish is great for soothing a sore throat,

so the one I bought on sale is coming in handy.

Add 600cc of water and 4 tablespoons of sugar.

Once the vegetables are tender, add the beef.

Place the shirataki noodles away from the beef, skim off any scum, and add 4 tablespoons of soy sauce.

Add about 2 tablespoons of mirin and adjust the seasoning to taste

Add more if it's too light. Bring to a boil, then let it cool to allow the flavors to meld.
